We have 30 pounds of black truffles, 40 pounds of (unintelligible) caviar, 30 whole salmon just to make smoked salmon, so 60 sides. We have 800 lobsters. So it's a lot of food.\"\u003cbr/\u003e              The extensive menu includes taro tacos, crab-stuffed hibiscus and Miyazaki wagyu beef, along with crowd-favorites like caviar-topped potatoes and black truffle chicken pot pie. \u003cbr/\u003e              \"Our chicken pot pie is still very popular. I have to make it every year. Our macaroni and cheese with black truffles. I have to make them every year. We make our smoked salmon Oscars, the mini burgers or Spago pizzas, if not people make me go to Spago and pick up some pizzas. So people really love comfort food also. But we always make some new things,\" said Puck. \u003cbr/\u003e              Puck will also debut a brand new, sustainable varietal of chocolate. \u003cbr/\u003e              \"This year we have something which is totally new, which is our ruby chocolate. This is really the world premiere of this chocolate. It's the first time in 80 years there's something new coming out in the chocolate world. So this is a coco bean found in South America, in Brazil mostly, and we mix it with cocoa butter and it makes this ruby-colored chocolate that has a lemony flavor. It has a little raspberry flavor in it and we make a chocolate mousse and we fill up our globes, our golden sugar globes, and it makes a fantastic dessert, light and tasty,\" said Puck. \u003cbr/\u003e              Puck's golden sugar globes are filled with ruby chocolate, strawberry-hibiscus mousse and mascarpone cream. \u003cbr/\u003e              Event producer Cheryl Cecchetto of Sequoia Productions says this year's Governors Ball is all about celebrating the 90th anniversary of the Academy Awards. \u003cbr/\u003e              \"The pallet is really clean and soft and peaceful. And in the middle of that, if you look at the renderings, out pops a pivotal important artifact that made a huge difference either in the sound branch or the makeup branch or, as you can see behind me, Richard Edlund's camera, which was state of the art in the '30s, you know? And so we have these moments that are going to just stand out and represent all of film. Then in the center, in the heart of the ball, we have several of those fabulous Oscar vitrines set up, which we handle with care and with Oscars that haven't got out of a vault in forever! So it's really about film. The music, the visuals, the video, it's all about the history of film,\" Cecchetto said. \u003cbr/\u003e              While florist Mark Held of Mark's Garden will fill the room with roses and drought-tolerant succulents. \u003cbr/\u003e              \"This year we are using succulents and we are using tons of them - all different shapes, all different sizes, hanging succulents, vertical succulents, round succulents, all different colors, very neat.
