Normally that would close a restaurant down immediately.\u003cbr/\u003e              But at a new Bangkok eatery, bugs in the beef ragu and pests in the pesto aren't a disaster - they're a business plan. \u003cbr/\u003e              STORYLINE:\u003cbr/\u003e              Fancy a forkful? \u003cbr/\u003e              Yes, those are mixed sauteed insects served as a starter. \u003cbr/\u003e              It's opening time in Bangkok's latest hipster zone, and this particular restaurant is creating quite a buzz.\u003cbr/\u003e              The menu features bugs of all shapes and sizes, combined with more familiar ingredients. \u003cbr/\u003e              These diners are getting stuck in to the house pasta: spaghetti with garlic and bacon - and crickets. \u003cbr/\u003e              Don't fancy it? This young diner says the tastes and textures are a revelation.\u003cbr/\u003e              \"When I taste this, it's opened my new attitudes about foods, that insects are one of the foods that's edible,\" says Kelvarin Chotvichit, a 25-year-old lawyer from Bangkok. \u003cbr/\u003e              \"And it's tasty too. It's not weird as you thought. And the feeling – it's crispy, it's like a snack. Yeah, I like it.\"\u003cbr/\u003e              That's just what they want to hear at \"Insects in the Backyard\". \u003cbr/\u003e              The new Bangkok eatery aims to revolutionise our view of nature's least-loved creatures and what you can do with them.\u003cbr/\u003e              One of the partners is Canadian, Regan Suzuki Pairojmahakij. \u003cbr/\u003e              She believes this is one of the first restaurants in the world to position insect cuisine as proper fine-dining. \u003cbr/\u003e              \"In Thailand, there is a long history of local populations, of people consuming insects and they continue to do, in large amounts. But it's essentially as a snack, not a part of dishes, not a part of cuisine.\"\u003cbr/\u003e              \"We are interested in moving people away from seeing insects from purely as a snack to be a part of a gourmet and a delicious cuisine.\"\u003cbr/\u003e              That's quite a responsibility for executive chef Thitiwat Tantragarn, a veteran of some of Thailand's top restaurants. \u003cbr/\u003e              Together with his team he's designed a menu that features seven different insects, including ants, crickets, bamboo caterpillars, silkworms and giant water beetles, which go into a ravioli.\u003cbr/\u003e              Far from being daunted, he says he's loving the challenge.\u003cbr/\u003e              \"It's a new thing, you know. You live in the world, you need to learn the new thing. I cook with the pork, the chicken, for long time ago but for the insect is a new world of cooking, new lesson.\"\u003cbr/\u003e              United Nations food experts have pushed insects as a source of nutrition for years. \u003cbr/\u003e              Studies show they're higher in protein, beneficial fats and minerals than traditional livestock. \u003cbr/\u003e              Even when commercially farmed, their environmental impact is far lower, needing less feed and emitting less carbon. \u003cbr/\u003e              Not that Thais need lectures on the benefits. \u003cbr/\u003e              They've been eating insects for years. \u003cbr/\u003e              Even today bug vendors are a common sight on the nation's streets.\u003cbr/\u003e              Wholesaler Amornsiri Sompornsuksawat is one of the restaurant's suppliers. \u003cbr/\u003e              The prospect of a new market – the fine dining sector – is enough to make her salivate.\u003cbr/\u003e              \"Wow\", she says, \"I hope that people will eat more of my bugs and I can sell more of them. We can have new menus, replacing the old familiar ones. It's great.\"\u003cbr/\u003e              \"Insects in the Backyard\" has only been open a matter of weeks, so it's too early to tell whether its mission to metamorphose insect cuisine is on track. \u003cbr/\u003e              Amornrat Simapaisan, a local shop manager, tucked in quite happily to her watermelon and cricket salad.\u003cbr/\u003e              \"It's tasty. It's munchy,\" she says.\u003cbr/\u003e              But her dining partner exemplified the biggest problem the restaurant faces; that lingering feeling of - well - disgust.\u003cbr/\u003e              \"I still have a barrier, some kind of... something in my mind that still stops me from eating it. But, yes, it kind of tastes like normal, nothing, like normal food, but... yeah,\" he says.\u003cbr/\u003e              And that is the message from the restaurant itself: judge us on our food.\u003cbr/\u003e              \"There is obviously the shock value with insects and that might bring some people through the door,\" admits Suzuki Pairojmahakij.\u003cbr/\u003e              \"But, essentially, for the longevity or sustainability of the restaurant, and, for the sector of the edible insects as a whole, it has to stand on its own legs, so to speak. It has to be attractive. It has to be delicious and it actually has to add something to cuisine as we know it.\"\u003cbr/\u003e              Not all the dishes include insects, so you can still eat there and avoid them. \u003cbr/\u003e              But the restaurant's backers hope more and more people will put aside their food phobias and get bitten by the edible bug bug.\u003cbr/\u003e            \u003cbr/\u003e\u003cbr/\u003e              Bangkok, Thailand – 12 September 2017\u003cbr/\u003e              1.
