But this is a far cry from green fields, tractors and farmyard animals.Kajodlingen - which translates as 'Quay Garden' - is situated in the west coast Swedish city's Frihamnen area, a remnant of the old ship-building industry.It was started in February 2016, not as a green-themed escape from urban life, but an attempt to forge careers as completely self-sufficient city farmers.Both worked in farming associations before. Bailey says they were inspired by other successful international urban farming projects, such as Brooklyn Grange in New York City.\"All the farmers in the countryside, they have middle hands, one or two, and since we skip that, we can actually make lots more profit from our crops,\" explains the 32-year-old.\"And each square metre we're aiming at three, four harvests a season on each square metre. So, that means these 250 square metres are actually a thousand square metres.\"For now, both rely on incomes from other jobs too - Lindh works for a compost service, Bailey does bartending shifts.But they're confident if they can expand their commercial farm space to 500 square metres, then their dream will become a reality.\"If you're living in the city and you're interested in growing stuff, you should be able to be a farmer in the city,\" says Bailey.\"But it's also very efficient in many ways, you don't need diesel to transport things, you don't need big storage rooms because you deliver every day and stuff like that. \"People can come and harvest and go home and make their salad. So, it's very efficient in many ways.\"Come summer, Bailey and Lindh will be harvesting beans, peas, tomatoes and salad plants here.The produce is sold to a small number of local restaurants and high-end chefs in need of fresh produce. During high season, they make deliveries two days a week.Kajodlingen also makes money by opening up the farm to locals. Visitors can pick their own produce and then pay just for what they take.\"We have lost touch with how food is produced in the city and we have been alienated from the production of food,\" says Martin Berg from Gothenburg's property department.Berg says that beyond creating jobs, urban farms like Kajodlingen help strengthen communities and create much-needed green spaces in concrete urban areas.\"One thing that we all have in common, we all have to eat and we all have some past experience of eating, but also at some extent how the food is produced,\" says Berg.\"And to grow food is something that we can meet around, if we don't have that much other things in common, we at least have the food.\"Kajodlingen makes regular deliveries to vRA, a Swedish Japanese-themed restaurant located inside Gothenburg's Clarion Hotel Post.Bailey often makes deliveries just using public transport or on electric bike, bringing colourful kale cut less than an hour ago.\"It's every chef's dream to get produce that was just taken from soil,\" says vRA line cook, Emma Fyman.\"You can tell directly on the flavour that it's very fresh and that it's organically grown and it's just something that's really important for us at vRA to work with the best produce. And the best produce is the freshest produce.\"\"We try to have a real high sustainability profile and it's very important for us to do our part and for our guests. \"And I think, for some of them, they don't know before they come to the restaurant, but for some of them, they're well-informed and that's perhaps why they come.\"Gothenburg, Sweden - 12 April 20171.
