But you know what, I started thinking, I am from Louisiana. And I grew up with a boathouse in my backyard and a country kitchen next to our house. Where there's a few lawn chairs and a concrete slab with a roof over it with a giant fish cooker that would take two pots this big and a smokehouse my father and I built out of bricks where you could put four or five big slabs ribs or chickens or brisket. And I started thinking, I've been hunting and fishing  and cooking all my life. It's just a part of what I have done. I am not a chef, but I guess I am a cook. And when I hear people go, 'I can't cook,' it's like, I can cook! How hard can it be?\"7. Tight on Kix Brooks adding onion to avocados8. SOUNDBITE (English) Kix Brooks, recording artist, on growing up in Louisiana:\"When I was old enough to get a car, me and my buds we headed for south Louisiana to get fresh crawfish or when the shrimp were coming in or when the oysters are ready. It's like getting them was half of the adventure, getting that stuff. And you know, where I come from, chicks dig it. If a dude can cook, if you know how to put on a big feast and have a big party, especially if you know a bit about wine, it's impressive. You know. You throw some guitar on that and even a dork like me can get a date.\"9. Kix Brooks squeezing lemon into his guacamole recipe10. SOUNDBITE (English) Kix Brooks, recording artist - on his signature recipe:\"I would probably just gravitate to red beans and rice just right off the top. This recipe has a lot more stuff than you will ever see in a red beans and rice recipe. The amount of ham hocks and the amount of different meats that are in there all put a real flavor in there. And you know, soaking beans for two days is important. This red beans and rice recipe is almost more like a chili than what you would think of. Most people whip up red beans and rice. They might even get the beans out of a can and you add some sausage and you cook it down with a few light spices. Red beans and rice is fun to eat and its easy, whatever. This one takes a good three days and to boil down all the ingredients as thick and as real and as flavorful as they need to be and your house will smell like that for a week and it's awesome.\"11. Medium of Kix Brooks tasting the guacamoleSTORYLINE:KIX BROOKS WHIPS UP A FEASTCountry singer, radio host and wine maker Kix Brooks is following his culinary path into a new cookbook called \"Cookin' It With Kix.\"Brooks is drawing on his Louisiana heritage and love of outdoor cooking and hunting for inspiration for the recipes.  But he admits that like a lot of his career, he didn't go into it thinking he was an expert. \"You know, my motto is 'I have never done this, so I am sure I'll be great at it,\" Brooks said. \"It seems like everything I have done, except for music, which I really worked at, I have just kind of backed into and realized I kinda know a little something about this.\"Brooks hosted a TV show on the Cooking Channel about steakhouses, so it was suggested that he might be able to write a cookbook.\"And I started thinking, I've been hunting and fishing  and cooking all my life,\" Brooks said. \"It's just a part of what I have done. I am not a chef but I guess I am a cook. And when I hear people go, 'I can't cook,' it's like, I can cook! How hard can it be?\"Many of the recipes feature food from the South or food that he's hunted, such as salmon, elk and even squirrel. \"And you know, where I come from, chicks dig it,\" Brooks said. \"If a dude can cook, if you know how to put on a big feast and have a big party, especially if you know a bit about wine, it's impressive. You throw some guitar on that and even a dork like me can get a date.\"His signature recipe is a red beans and rice recipe that has six different types of meat and requires three days to cook. \"This one takes a good three days and to boil down all the ingredients as thick and as real and as flavorful as they need to be and your house will smell like that for a week and it's awesome,\" Brooks
