General manager, Michael Pace joined the Clift last year after working for many years at the W hotel. He says the colony is expected to grow to 800,000 by 2017. He says: \"Who would've thought a year ago that competing hotels in San Francisco would be putting their resources together and going through the effort of putting bee hives on their roofs?\" There are now seven hotels in the area with rooftop hives.Organisers say the hotels were a natural place to put the hives - on the rooftop space high away from guests and pedestrians below.You might think bees would have trouble finding flowers to pollinate in an urban area, but bee keepers say it's not a problem.\"We have plenty of trees and shrubs, so that's never an issue,\" says Roger Garrison, a waiter turned bee keeper at the W San Francisco.\"The worker bees will locate a source and they actually come back to the hives to tell them what's up.\"The first hotel in the city to build bee hives just added a new feature.Fairmont San Francisco created this natural habitat area for wild bees which live in logs and vegetation, rather than hives.\"They're actually three times better pollinators than any other pollinators out there,\" says hotel spokesperson, Melissa Farrar.\"So, these bees are very important to the pollination process and every bite of food that we eat.\"The hotels are using the thousands of pounds of honey they're collecting to create honey-inspired cuisine in their restaurants as well as honey beer and honey-infused cocktails.In this foodie town, the honey is used to make the likes of Clift's Purple Haze drink with gin-infused lavender, honey syrup and lavender bitters and compressed watermelon salad with lavender infused honey and goat cheese.What started as housing a few hundred thousand bees on hotel roofs last year has already grown to a few million this year.
