The scientists decided not to add any additive colors to the artificial rice to keep it as natural as possible.
Much like instant noodles, the product is half cooked - just add hot water and the rice is cooked within 15 minutes.
Slamet Budijanto is leading the team of scientists behind the discovery dubbed analog (artificial) rice.
He wanted to come up with an invention that will contribute toward food diversification in Indonesia and take some pressure off rice production in the country.
"We also call the analog rice as artificial rice or customized rice because we can make this type of rice to meet our specific needs. For example, if we want to distribute rice for the poor people that are lacking protein, iron and vitamin A, we can safely adjust the analog rice to contain more of these nutrients," says Slamet.
In its first stage of public testing, analog rice has recently been made available to civil servants working for the city of Depok, an hour away from the capital Jakarta.
The Mayor of Depok, Nur Mahmudi Ismail, launched the "One Day No Rice" campaign in the canteen of his office last September to support the national goals of reducing Indonesians' dependency on rice and promote a more balanced, healthier diet.
The campaign involves around 800 people working for the Depok administration that are expected to avoid consuming rice for one day each week.
Nur has approached the Bogor scientists to provide supplies of analog rice and training for the food vendors at the canteen. Nur's office pays for the analog rice, and so the vendors get them for free as part of the campaign.
Nur says, "Since analog rice is produced dried and half-cooked, I am confident that this alternative rice product has the potential to contribute to the national food supply. This type of rice is long lasting and it also has a relatively low level of sugar and water."
In the canteen, vendors found that most customers like analog rice to be made into fried rice, a popular menu for many Indonesians.
In addition, they also serve the artificial rice as roasted rice, curry rice, rice balls as well as plain rice mixed with other items in the menu.
Generally public reception has been a positive one.
Diah Sadiah, a Depok's city official, says, "This artificial rice tastes just like regular rice. I can enjoy it and, even though we have the program of One Day No Rice, I don't feel that I am missing anything when I'm eating this rice."
But the Indonesian love affair with rice is more than just about food choices.
Many people across the archipelago still consider eating rice as a symbol of wealth and prosperity.
Meanwhile those who stick to eating other sources of natural carbohydrates, such as sago and cassava, as their main diet are often viewed as poor and shameful.
Nutritionist Wied Harry argues that, "If the scientists can create a type of rice that has texture, nutritional value and ease of cooking that are similar to those of regular rice, I think that the analog rice can be well received."
Moreover, Harry also stresses the importance of savvy marketing and social campaign to change people's perception of the artificial rice.
In the future the Bogor scientists are focusing on creating a type of analog rice with low sugar level for people who have diabetes.
They also want to work with bigger and more powerful machines in the lab to be able to produce more analog rice at a faster time to meet rising demand.
In terms of marketing, the scientists are targetting the growing middle class Indonesians that have become more health-conscious about what they eat.
Bogor, 11 June 2012
1.
