called whole berry fermentation. \u003cbr/\u003eThe head of the wine makers \"apellation\" Daniel Bulliat says that there are two very different techniques for creating the Beaujolais Nouveau and the other wines associated with the Beaujolais region. \u003cbr/\u003eFor the Nouveau the wine only has a short fermentation period, which allows the wine makers to preserve the fresh, fruity quality of the wine, without extracting bitter tannins from the grape skins. \u003cbr/\u003eWhereas the other wines have a longer fermentation and this allows for the wine to develop more mature flavours. \u003cbr/\u003eHowever locals are divided about the merits of the new wine. \u003cbr/\u003eOne restaurateur admits that there are those who love it, but others who do not.\u003cbr/\u003eOne grape grower says it is pleasant to drink and it can help to promote the region's other wines. \u003cbr/\u003eIn recent years French wines have become less popular in the global market as New World wines have established themselves.   \u003cbr/\u003eHowever one vocal critic of the wine, Lucien Favrot, the editor of a local magazine, says that the success of Beaujolais Nouveau is undeserved and the product has received little criticism from the local media. \u003cbr/\u003eFavort says that the secret of the Beaujolais Nouveau's success lies in some very clever marketing. \u003cbr/\u003eWine maker George Duboeuf, says the wine has always divided opinion.  \u003cbr/\u003eDuboeuf says the wine will be drunk across the world and confidently predicts that people will enjoy drinking it.  \u003cbr/\u003eAnother vinter with more modest ambitions than Duboeuf, Damian Dupeuble says that thanks to the fame of the Beaujolais Nouveau, the region's wines are famous across the world. \u003cbr/\u003eBeaujolais Nouveau is meant to be drunk young and wine makers recommend that the wine should be consumed by the following May, hence the rush to get the product to consumers across the
