It combines Roman Catholic observances of All Souls' Day with pre-Hispanic customs of offering food, or even cigars and tequila, to souls said to return for a day.\u003cbr/\u003eMesoamerican cultures used to preserve human skulls as trophies and use them in rituals to symbolise the end of a cycle. \u003cbr/\u003eBut when Spanish settlers arrived on the continent they tried to rid the country of this non-christian ritual.\u003cbr/\u003eIn the case of the skulls, the Spanish introduced their traditional sugar dough and substituted real skulls with candy ones.\u003cbr/\u003eMartha Patricia Pastor Gil, owner of the \"Calaveritas Paty\" factory, has been preparing sugar skulls for 15 years. \u003cbr/\u003eShe manufactures over 20,000 pieces for this time of year.\u003cbr/\u003eShe exports them as far as Houston in the United States, due to the increasing Hispanic community there.\u003cbr/\u003eTo make the skulls, first sugar is melted for around an hour, then it's poured into clay moulds to create the perfect shape.\u003cbr/\u003eIt then takes between 30 and 60 minutes to decorate the skulls with colourful sugar paints. \u003cbr/\u003eDespite festivities like Halloween encroaching on Day of the Dead festivities, Pastor Gil says she's confident the tradition will go on.\u003cbr/\u003e\"Despite other things (referring to traditions like Halloween) coming in, this tradition goes on. And I believe this (referring to the sugar skull) sells better than the chocolate ones because people use this one in their offerings\" she says. \u003cbr/\u003eThe Day of the Dead, or Dia de los Muertos, honours departed souls of loved ones who are welcomed back for a few intimate hours. \u003cbr/\u003eAt burial sites or intricately built altars, photos of loved ones are centered on skeleton figurines, bright decorations, candles, candy and other offerings such as the favourite foods of the departed. \u003cbr/\u003ePre-Columbian in origin, many of the themes and rituals now are mixtures of indigenous practices and Roman Catholicism.\u003cbr/\u003eThe holiday is celebrated in Mexico, Guatemala, Brazil and parts of Ecuador.\u003cbr/\u003eIn Mexico City's Jamaica Market, sugary skulls are on display everywhere. \u003cbr/\u003eThere's also sugar coffins, sugary sweet rolls - called Dead Bread - and Catrinas - a modern-day version of the Aztec's \"Lady of the Dead\", who was the guardian of the underworld.\u003cbr/\u003eGuillermina Garcia sells paper mache Catrinas made by her daughter.\u003cbr/\u003eIt's her hope the Mexican tradition of Day of the Dead can be preserved, despite the popularity of Halloween.\u003cbr/\u003e\"When I was a kid you would ask for the sugar skull and sing 'Come out, come out sad spirits'. Now it's; 'We want Halloween,\" she says.\u003cbr/\u003e\"So our traditions are being left behind. So what Miss Guillermina and her children try to rescue this tradition and this culture.\"\u003cbr/\u003eElsewhere, Mexico City resident, Nancy Melo, is taking home this Catrina skeleton.\u003cbr/\u003e\"I like to buy Catrinas,\" she says.\u003cbr/\u003e\"I love Catrinas, because it's something very representative of the Day of the Dead. I like very much how they are decorated, their dresses, their hats.\"\u003cbr/\u003eDay of the Dead has deep roots in pre-Hispanic culture and the tradition is particularly strong in states such as Michoacan, where there are large indigenous populations.\u003cbr/\u003eIt's believed on the day spirits of the dead will pay a visit to their home and should therefore be provided with adequate sustenance for the journey.\u003cbr/\u003eA designated area of the home is cleared of its normal furnishings to set up an altar.\u003cbr/\u003eWhile death is a topic avoided in many countries, the remembrance of deceased ancestors and loved ones is traditional here. \u003cbr/\u003eIt's often marked with the lighting of candles or lamps and the laying out of offerings of food and drink.\u003cbr/\u003eAP Television\u003cbr/\u003eMexico City, Mexico - 24 October 2014\u003cbr/\u003e1.
