They were the city's biggest export and both the rich and the poor would dine on them at oyster houses.\u003cbr/\u003eThat was until the water became too polluted and the oysters died off. \u003cbr/\u003eWhen the oysters declined, so did the water quality - because the species actually helped to filter pollution.\u003cbr/\u003eBut now, scientists, activists and architects are working to bring back the oysters and also the clean water.  \u003cbr/\u003eThey are building reefs and plan to place billions of oysters into the water.\u003cbr/\u003eNot long into the project but already, University of New Hampshire's Ray Grizzle says the oysters are starting to take root again.\u003cbr/\u003e\"We have one area of the experimental reef that has some two year old oysters that are getting to be a good size, so we are getting good survival, natural reproduction; those are the best indicators that you can have for the long term sustainability of the oysters,\" says Grizzle.\u003cbr/\u003eHolding up one of his latest finds, Grizzle examines the shell.\u003cbr/\u003e\"So we've got an oyster that is a fully reproducing female probably, two years heading in to its third year and looks good and healthy, this is the really good news,\" he says.\u003cbr/\u003eCurrently, none of the oysters found in the water are edible. They can cause serious illness if consumed due to the level of pollutants in the water - which the oysters' filtration process concentrates. \u003cbr/\u003eHowever, Grizzle believes with the right amount of oysters and with time, the water will grow cleaner and eventually, the oysters may even be good enough to shuck (the process of cracking open the oyster shell with a knife for eating raw).\u003cbr/\u003e\"The thing about oyster restoration that is different than perhaps just about any other efforts that I know of is that is has multiple benefits, the habitat quality, it improves habitat for fish and bird species and it also provides water filtration that will affect water quality,\" Grizzle says.\u003cbr/\u003eThe project is expensive and the final results may not be seen until as late as 2050.\u003cbr/\u003eGrizzle says they will need approximately one million oysters per acre to make the change. Each acre will cost somewhere between USD $50-150,000.\u003cbr/\u003eAlthough the oysters filter the pollutants and nitrates from the water, they are not a substitute for other waste treatment systems.\u003cbr/\u003e\"There's the notion that ok we are building these reefs to clean up the harbour so we don't have to do anything on shore for pollution. It is about an in stream removal for particulars and pollutants in general, but it is not looked at as a substitution for waste water or other kinds of treatment on land,\" says Grizzle.\u003cbr/\u003eIt is important not to grow complacent once the oyster population has been restored - pollution and over fishing was the cause for the oysters' rapid decline a century ago.\u003cbr/\u003eBack on dry land and landscape Architect, Kate Orff, says she sees a future where oysters and other bivalves can help reshape the urban landscape - even help the Gowanus Canal, one of the most polluted waterways in the US. In turn, she thinks other cities can follow suit.\u003cbr/\u003e\"Many global cities look to New York for kind of, pilot projects and solutions,\" says Orff.  \"I mean, we have been innovating in green roofs and making our street-scapes and so I feel like, New York is sort of trying to set the trend for cities that are rich urban landscapes and not the cities of the past that are associated with belching factories and slums and so we are trying to remake our landscape so my point is that we should be remaking  our harbour scape as well,\" she says.\u003cbr/\u003eOrff is hoping New York could become a trend-setter for other world cities suffering from water pollution.\u003cbr/\u003e\"New York is sort of trying to set the trend for cities that are rich urban landscapes and not just the cities of the past that are associated with belching factories and slums and so we are trying to remake our landscape so my point is that we should be remaking our waters,\" she says. \u003cbr/\u003eOysters are not just a delicious food source but are also vital for keeping water clean.
