In four hours we're going to raise the alcohol from 25 degrees to 80. What is special about this still is that it contains only 300 litres, ten times less than the Scottish ones.  What we are extracting from here is white whisky, then we are putting that white whiskey for at least 3 years in oak barrels. market.\u003cbr/\u003eBut in Champagne region one man has decided to break the wine-making mould and produce another alcoholic beverage instead - whisky.\u003cbr/\u003eFrance's Champagne region is one of the most famous grape growing and wine producing areas of the world.\u003cbr/\u003ePerhaps a little known fact is that the area is also a major barley producer.\u003cbr/\u003eThis makes it the perfect location for former vintner, Thierry Guillon's latest venture - whisky production.\u003cbr/\u003eGuillon says he wanted to use the local barley and the water source on his land to produce his own whisky brand.\u003cbr/\u003eThe Guillon Distillery has been producing single malt whisky since 1999. \u003cbr/\u003eBy the end of 2002 the first bottles of Guillon whisky were ready and 10-thousand bottles were sold in 2003. \u003cbr/\u003eGuillon runs tours through his distillery and tourists say they like what they taste.\u003cbr/\u003eGuillon explains the science behind the whisky-making process \u003cbr/\u003eHe says he does not want to copy traditional Scotch whisky but hopes to make a unique French product from the Champagne region.\u003cbr/\u003eGuillon now exports
