As Caesar crossed the Rubicon in 49 BC and made the declaration 'alea iacta est'ÄÅ¼Ë When the blend of one of South Africa's most iconic was first completed, it was for us too, 'alea iacta est': 'the die was cast'.\"\u003cbr/\u003e44. Mid wines lined up on the tasting table\u003cbr/\u003eThe countdown's begun to the 2010 FIFA World Cup and for thousands of football fans it'll be their first taste of South Africa. \u003cbr/\u003eJust forty-five minutes drive from one of the host cities, Cape Town, lies the Cape Winelands, home to South Africa's oldest wine route, and some of the country's best wine. \u003cbr/\u003eBut now the region's also producing cheeses and olive oil. \u003cbr/\u003eFairview wine estate, just outside Paarl.\u003cbr/\u003eGroups of wine lovers come to sample some of its ever-growing wine range. \u003cbr/\u003eThe tasting stations here, modeled to look like wine barrels, are overseen by Tasting Room Manager, Neil du Plessis. \u003cbr/\u003eThey are often bustling, probably due to Fairview's reputation as an award-winning wine maker, famous for its signature shiraz. \u003cbr/\u003e\"Our Fairview shiraz is made to be drunk a little bit younger so it will definitely be nice and fruit-forward. It would have a firm mouth feel to it. It does have the typical shiraz characteristics of, kind of, cloves, nutmeg, a little bit of spiciness and a nice dry finish. We make our Fairview shiraz quite young so it's nice and juicy. And with ageing potential of about 3 to 5 years, I would say,\" explains du Plessis.\u003cbr/\u003e50 percent of Fairview's wine production is exported to some 40 countries around the world.\u003cbr/\u003eFairview doesn't just specialize in shiraz, but is also renowned for its cheeses, which have won almost as many awards as its wine. \u003cbr/\u003eAnd although the estate's poshest cheese is a Camembert, its flagship cheeses are made from goats' milk, from the estate's very own herd. \u003cbr/\u003eVisitors to Fairview are greeted by two friendly billy goats who have been well-behaved enough to have graduated from the cheese farm across the road, to take up residence in their own tower outside the tasting room. \u003cbr/\u003eIf visitors are concerned about driving after one two many tastings, they can skip the highway and take a helicopter instead. \u003cbr/\u003eHelicopter tours are offered from the Cape Town waterfront, as well as the airport, giving adventurous drinkers a view of the patchwork of vineyards, in between glasses of wine. \u003cbr/\u003eTastings at three vineyards and a private helicopter to the Stellenbosch wine route costs about R3650 ($490 US Dollars) per person. \u003cbr/\u003eA short helicopter ride away from Fairview, the town of Somerset West sits on the Atlantic coast. \u003cbr/\u003eThe 200 hectares of the Morgenster wine and olive estate lie on the outskirts of this seaside town, with a Cape Dutch homestead - dating back to the mid 1700s - at its heart. \u003cbr/\u003eAlthough Morgenster is famed for its wine, whoch is a Bordeaux blend, its owner Guilio Bertrand, a native Italian, has introduced olive oil to the estate's repertoire,\u003cbr/\u003e\"Now I'm producing what is considered one of the best olive oils in the world - absolutely the best in South Africa. And also a very good - one of the best - the best wine in South Africa. French style the wine, Italian style the olive oil,\" says Bertrand.\u003cbr/\u003eThe estate's olive oil is now even more famous than the wine, and Bertrand says he cooks strictly only with his own olive oil.\u003cbr/\u003eThe wine labels do not list any cultivars, so if you buy Morgenster wines, you know what's in them, says Bertrand. \u003cbr/\u003e\"I am saying that I like to produce a Bordeaux blend, but it's not Bordeaux, because it's produced in South Africa. Like I was saying before for the trees - the olive trees - it is the same for the wine. I have French varieties, produced here, but it's a South African wine,\" he says.\u003cbr/\u003eThe red blend - the estate doesn't make white wine - is aged in French oak barrels in a cool cellar, which guests can visit after their tasting. \u003cbr/\u003eA bottle of Lourens River Valley 2004 is R128 ($16 US Dollars) at the cellar door, up to R390 ($49 US Dollars) for a bottle of Morgenster's 2003 flagship, a blend of merlot, cabernet sauvignon and cabernet franc, a five star winner critically-acclaimed in South Africa's Platter's wine guide. \u003cbr/\u003eThose who come here don't just taste the wine, but also the extra virgin olive oil, a blend of 14 different cultivars, giving the oil its distinctive cut grass nose. \u003cbr/\u003eAnd of course the olives themselves. \u003cbr/\u003eTwo thirds of the estate is given over to olive groves. \u003cbr/\u003eMilton Makhaza is the resident sommelier at the five star Mount Grace Hotel, just outside Johannesburg, reknowned for its substantial and well-edited wine list. \u003cbr/\u003eMakhaza says South African wines stand out internationally. \u003cbr/\u003e\"What makes South African wines special, firstly, they are made in South Africa. We are responsible for 65 percent plus wine quality and then it's perfected in the cellar. So you can't make good wines from bad grapes. But from excellent grapes you can make premium wines. And that's what make Meerlust one of the iconic wines in South Africa. We try to produce each year the best that the crop offers,\" he says.\u003cbr/\u003eMeerlust produces a range of red and white wines, including an acclaimed pinot noir, which is grown with the help of the sea breeze from nearby False Bay, from which the estate's name is derived. \u003cbr/\u003eMeer-Lust: the pleasure of the ocean breeze. \u003cbr/\u003eThe estate is famed for its iconic Rubicon, a red blend that often tops the wine lists of high-end South African restaurants, at around R560 ($75 US Dollars), or R270 ($36 US Dollars) direct from a wine merchant. \u003cbr/\u003eWesley Taylor, Meerlust's Tasting Room Manager tells the story behind the Rubicon. \u003cbr/\u003e\"Previously, South Africa was known for single varieties and Meerlust was one of the first to pioneer the blended red, appropriately named the Rubicon.
