Mid of lattes with designs\u003cbr/\u003eServing cafe lattes in New York is no longer about just steaming some milk and adding espresso.  \u003cbr/\u003eWith the creation of elaborate latte art, some local coffee baristas have taken things to a whole new level.\u003cbr/\u003eSammy Lin, the most popular barista on the upper east side of New York, has been serving up his special lattes and cappuccinos for seven years.\u003cbr/\u003eOriginally from China, Lin learned from an Italian barista how to create artwork using milk foam.  \u003cbr/\u003eAfter pouring espresso into a mug, Lin slowly adds the milk. Then he scoops up the remainder of the foam, and with the help of a stick, creates intricate designs.\u003cbr/\u003eLin says the process is more complex than it looks.  \u003cbr/\u003eHe maintains that the most important thing is to start with high-quality coffee beans.\u003cbr/\u003e\"Taste almost more important than design, so for me, the first thing I was always thinking is how to make great taste coffee, then how to make great look coffee,\" he said.\u003cbr/\u003eLin says he enjoys making people smile with his funny and beautiful designs atop their coffee or hot cocoa.\u003cbr/\u003e\"My favourite is monkey face, because it is almost my first design, my first idea and a lot of kids, they like monkey face. It's funny, it's friendly, it feel warm,\" said Lin.\u003cbr/\u003eLatte art is done using one of two methods. It can be either \"free hand,\" meaning there's no instruments used to create the design. The second method is referred to as \"etching,\" using a stick, cinnamon, chocolate sauce, or milk foam.  \u003cbr/\u003eDowntown in Greenwich Village, Joe's- the Art of Coffee, is considered to be among the best shops for examples of this emerging art form.\u003cbr/\u003eJoe's manager Amanda Byron, says the latte art movement started in Seattle, and now is considered to be a sign of a real artisanal coffee shop.\u003cbr/\u003e\"Latte art exists, not just as an aesthetically pleasing thing, but it also is there to make sure that all of the elements are in place. So you have to have perfect espresso, and you have to have perfectly steamed milk, and when the two elements come together, then you can create latte art,\" she said.\u003cbr/\u003eByron says people sometimes say they don't want to drink their latte because it's \"too pretty.\"\u003cbr/\u003eAt Joe's, the baristas only practice \"free hand\" art, creating mostly hearts, leaves, and tulips. They do it by making slight movements in the wrist whilst pouring the milk.\u003cbr/\u003eNew Yorkers seem to respond positively to these fun designs on top of their morning latte.  \u003cbr/\u003eCoffee drinker Matthew Wilkas says he prefers getting designs that correspond to his mood.\u003cbr/\u003e\"I like the flower, because it's the most complex, but the heart is kind of nice.
