So bees produce more in cities, 405 times more in cities than in the countryside. And the second reason is pollution. Certainly, Paris is polluted with fumes but far less than in the countryside where pesticides kill our bees. You currently have, not only in France but everywhere in the world, 30 to 50% of the bee colonies die."
7. Mid shot flowers with street behind
8. Climate change, monocultures in the countryside, the intensive use of pesticides for 20 or 30 years and other pathological factors that attack bees. Currently in the south-west of France bees are facing vespa velutina, which is an asian hornet that arrived in France five years ago."
18. So it means that it's honey produced in the city, where we have lots of gardens and parks and flowers all over the place and practically no pesticides, no chemicals, nothing. Things have changed a lot in Paris over the years and basically our honey is really what you would call organic, although it's a honey that is made in the city. It's excellent."
20. Various of honey being extracted and poured from container
The Grand Palais in Paris is buzzing with activity.
This jewel in the Parisian crown usually exhibits world famous artists such as Pablo Picasso and Andy Warhol.
But now it has become the permanent home to more than 140,000 bees.
High above Paris there's a buzz in the air.
These beehives have an exclusive postal address - situated as they are on the Grand Palais.
Apiculture, or the rearing and management of bees, is flourishing in the French capital.
Currently there are close to 300 in Paris, according to the French National Association of Beekeepers.
Some of the largest of these beehives are housed in unusual locations like the Grand Palais, or on the rooftops of the city's two opera houses, the Garnier and the Bastille.
Beekeeper Nicolas Geant, who has 25 years of experience under his belt, is responsible for the bees atop the Grand Palais.
His first harvest was September 2.
He wanted to install beehives in the city because he says urban beehives are more productive than hives in the countryside.
According to Union of French Apiarists, the mortality rate for city bees is only six percent, compared to thirty-three percent for their cousins in the countryside.
Not only are the city bees living longer, they're also producing more honey- Parisian apiarists claim that some of their hives yield about 100 kilos of honey a year, almost five times the amount produced by bees in the countryside.
The lack of predators and pesticides, as well as a profusion of flowers and a longer flowering season, owing to the city's warmer climate, all contribute to the improved productivity of urban bees.
And government-backed testing has confirmed that Parisian honey contains surprisingly little traces of pollutants.
Other hives are dotted around the city, on hotel and apartment rooftops, where they are harvested by the city's growing swarm of apicultural enthusiasts.
The rise in urban bee cultivation comes at the same time that experts fear that bees in France are being threatened by Asian hornets, particularly in south-western France.
Just a few hornets have been known to destroy entire beehives in a couple of days, and scientists fear that as the decline of bees will adversely affect the agricultural industries that rely on them for pollination.
The modern day Parisian beekeepers are part of a rich tradition of apiculture in the city, which traces its roots back to 1856.
That was the year Henri Hamet, a French biologist, founded the Socit Centrale d'Apiculture (Central Apicultural Society), which started beehives and a school of beekeeping in the regal Luxembourg Garden.
Hamet's school and hives, which underwent a facelift in 1991, are thriving today, brimming not only with the bees but also with students eager to pay the 160 euros ($227 USD) it costs to learn the secrets of beekeeping.
Marie Le Groux, a former student and beekeeper who helped with this year's harvest, says interest in the school was strong and that they had a waiting list of more than a hundred applicants.
The Jardin du Luxembourg beehives produce 600 to 700 kilos of honey per harvest.
According to Alain Sandmeyer, one of the volunteer instructors at Luxembourg, plants, trees and shrubbery are sparser in rural areas, thus attracting fewer bees.
Furthermore, bees in the countryside are dying off from pesticides and fertilizers associated with farmland. Pesticides are not allowed in Luxembourg.
Urban beekeeping is not unique to France.
It's a common practice in big cities across the world, including Berlin, London, Tokyo and Washington D.C. However, in New York City beekeeping is illegal and punishable by a $2,000 fine.
The sweet, floral honey produced at locations such as the Grand Palais and the Opera Garnier sells at gift shops and high-end boutiques for around 15 euros ($21 USD)for a 125 gm pot, making it amongst the most expensive in the world.
With the bees thriving and their honey flowing, the tale of the Parisian apiarists appears to be one without a sting.

<button
