Wide of workers sticking packaging on chocolate\u003cbr/\u003eIndonesia isn't famed for its luxury chocolates. \u003cbr/\u003eBut now the Asian island nation is producing artisan chocolate with the help of a Belgian chocolatier.\u003cbr/\u003ePsychology graduate Thierry Detourney thinks Indonesia is the natural home for his new venture - \"Monggo\" chocolates.\u003cbr/\u003eMonggo is the Javanese word for 'please'.\u003cbr/\u003eDetourney opened the city of Yogyakarta's first chocolate factory in the tourist district of Kota Gede in 2005.\u003cbr/\u003eThe chocolate combines Javanese and European recipes and uses high-quality cocoa beans from the islands of Java and Sumatra.\u003cbr/\u003eThe production line begins with the process of melting chocolate at 45 degrees Celsius (115 Fahrenheit) for 15 minutes.\u003cbr/\u003eThen the chocolate is kept in a cooler room before being melted again, this time at 32 degrees Celsius (90 Fahrenheit).\u003cbr/\u003eAfterwards, factory workers mix the chocolate with various distinctive local ingredients such as ginger, chili and cashew nuts. \u003cbr/\u003eIn a separate room, workers pour the chocolate and its added flavours onto trays, forming blocks before putting them into a freezer for 15 minutes.\u003cbr/\u003eDetourney got the idea for his business when he visited Yogyakarta in 2001 and could not find good chocolate that matched European standards.\u003cbr/\u003eHaving been married to an Indonesian, he decided to move into town and explored the idea of making an upmarket Indonesian-made chocolate for tourists.\u003cbr/\u003eTo make his chocolate stand out from other similar products in the market, Detourney uses pure cocoa butter, refusing to use cheaper substitutes like vegetable or palm oil. \u003cbr/\u003eDetourney says: \"\"The main difference was quality. So we do premium dark chocolate here. This is very high quality, sometimes higher than some imported chocolate from Europe. So this is the first difference. And then second, we try to make a different taste or  feeling or using ingredients only from Indonesia.\"\u003cbr/\u003eDetourney adds that his chocolate does not use any preservatives and has other health benefits. He believes, high quality dark chocolate contains antioxidants and can help lower blood pressure. \u003cbr/\u003eIn the primary packaging room, aluminium foil is used extensively to avoid contamination with the chocolate bars.\u003cbr/\u003eFactory workers wrap chocolate with aluminium foil inside a chilled room with aluminium-plastered walls. \u003cbr/\u003eAfterwards, the chocolate is kept at a cool temperature overnight to reinforce its shape and ensure a satisfying snap when bitten. \u003cbr/\u003eNext door, workers put the Chocolate Monggo brand on the product - the final stage of packaging\u003cbr/\u003eThe chocolate goes on sale at upscale supermarkets and through the company's own distribution line.\u003cbr/\u003eIn addition to his chocolate being made with premium quality, Detourney also believes in running an environmentally friendly company.\u003cbr/\u003e\"We try to do a clean business, so we choose this recycled paper. If we cannot find recycled paper, because here it's sometimes very limited the material that we can find, we also use, for example, FSC paper which is Forest Stewardship Council,\" he explains. \u003cbr/\u003eDetourney has also started using solar panels to generate some of the electricity needed to run his factory.\u003cbr/\u003eThe packaging features traditional Javanese icons such as famous shadow-puppet characters and the landmark Borobudur temple.\u003cbr/\u003eAs this Javanese chocolate finds a loyal following, the factory has expanded its operation significantly in recent years.\u003cbr/\u003eIn 2005 it had just three people worked here, including Thierry, but today it employs 80 members of staff in the factory and independent shops. \u003cbr/\u003eThe factory produces 50,000 chocolate bars every month, but this is still small compared to the European and American chocolate giants who produce this number every day.\u003cbr/\u003eDetourney believes there is a great potential for the chocolate industry in Indonesia, which is one of the world's major producers of cocoa beans.\u003cbr/\u003eIn Indonesia, the annual chocolate consumption is only 300 grams per capita, while in developed countries, the annual rate of consumption can reach as high as 9 kg per capita.\u003cbr/\u003eDetourney also argues that the Indonesian middle class is growing rapidly due to new wealth generated in the country.\u003cbr/\u003e\"There is lot of potential, I think also in Indonesia, there is a middle class growing and coming up since a few years now. Before it was not so obvious there was a middle class here, and now this middle class is also coming up, and these people want to have good quality food,\" he says.\u003cbr/\u003eThe future of Chocolate Monggo looks promising.\u003cbr/\u003eWhile the chocolate's core market remains in Indonesia, Detourney is setting his sights on Singapore, the Netherlands and Australia for export this year.\u003cbr/\u003eDetourney is also personally heading the product development team, coming up with new products featuring popular Indonesian tastes.
