Vegetables are the best thing, though.\"\u003cbr/\u003eA source of nutrition and income, Mariam's garden is one of the few shocks of green in the south-eastern edge of Cairo's low-income urban sprawl.\u003cbr/\u003eBut more are sprouting up.\u003cbr/\u003eHundreds of new rooftop gardens have been established over the last few years with funding and technical support from local private companies and NGOs like Schaduf.\u003cbr/\u003eMohamed Barakat, an agricultural engineer, has seen the gardens change local communities in the three years he's worked for Schaduf.\u003cbr/\u003e\"The people have work, money, nutritious food, they see things like vegetables, also, everyday they are seeing these things grow. In this environment, we've heard a lot of stories of happy kids enjoying and taking responsibility for the gardens.\"\u003cbr/\u003eCairo is famously traffic-choked, polluted, and lacking in public green spaces-with a large impoverished population that spends most of their income on purchasing food.\u003cbr/\u003eRooftop farmer Mohamed Abdul-Hakim is enthusiastic about the programme since joining earlier this year.  \u003cbr/\u003eHe's had financial support from the German Federal Enterprise for International Cooperation (GIZ).\u003cbr/\u003e\"At first when we explained the subject to the neighbours and started the project, they were doubtful, saying I don't get this, what is this. It's unusual,\" says Abdul-Hakim.\u003cbr/\u003e\"But then they saw the experiment, all over the roofs, and they asked for the same thing. In the end they asked GIZ and Schaduf to come again and build a farm just like this farm.\"\u003cbr/\u003eRooftop farmers like Abdul-Hakim and Tulba plant seeds in pots and place them into square, flat foam containers.\u003cbr/\u003eThese float in shallow basins of water - a cheap hydroponic system that can be easily shaded and watered by a single farmer.\u003cbr/\u003eThese green patches amidst the grey concrete and red brick have been a success, increasing scientific understanding of the benefits and efficiencies of gardening techniques.\u003cbr/\u003eBut Egypt's building laws mean they're not always legal.\u003cbr/\u003eSo researchers from the American University of Cairo are trying to improve the gardens and convince the authorities to relax the restrictions.\u003cbr/\u003eCindy Youssef, research associate for the Research Institute for Sustainable Environment (RISE) says: \"Not everyone respects the building code. For example, in neighbourhoods like the slums, they build in their own way. They do not have defined building 'standards'.
