Then how about 'gator burgers?\u003cbr/\u003eFor people living in the swampy areas of the southeastern United States the ever-present alligator can often be found on local menus.\u003cbr/\u003eThe knives are sharpened and the shiny steel gurneys bloodied at All American Gator Products, the end of the line for about 1,000 alligators killed during this year's hunting season in Florida. \u003cbr/\u003eIt's the busiest time of year here at one of the state's largest gator processing plants, where the toothy reptiles make their first stop on a path from the swamp to a hamburger bun, a basket of nuggets or a spot on a shelf full of handbags, wallets and souvenir heads.  \u003cbr/\u003eRoughly 6,000 alligators are killed each year in Florida during the 11-week public hunting season from August to November. \u003cbr/\u003eMost end up at one of the state's 34 licensed processors.   \u003cbr/\u003eAll American and its co-op partners process roughly 200,000 pounds of alligator meat about 2,800 gators annually for sale to individuals and restaurants.  \u003cbr/\u003eOn a recent afternoon in the yellow-walled warehouse that looks like a morgue, workers in yellow rubber aprons sliced into half-skinned gators splayed out on steel tables.  \u003cbr/\u003eA few feet away, others diced up meat into nuggets and filets, while at another table, workers weighed, bagged and boxed slabs of the chicken-like flesh. \u003cbr/\u003eA nearby room held stacks of gator hides.  \u003cbr/\u003eThe facility smells like, well, alligator - a fishy, overpowering stench that takes a little getting used to.  \u003cbr/\u003eBrian Wood has been in the alligator processing business for over two decades and he's never been busier.\u003cbr/\u003eIn the processing plant an alligator is treated much like any other large animal to be butchered.\u003cbr/\u003eThe animal is skinned, gutted and, like a large fish, the meat is removed from the bone.\u003cbr/\u003eFilets are cut much like a chicken or a piece of fish with the flick of a knife.\u003cbr/\u003eAnd, for the proud sportsman, Wood says the head and feet of the alligator can be mounted as a trophy.\u003cbr/\u003eDown the road from All American Gator Products, is a restaurant specialising in alligator burger and hash.\u003cbr/\u003eJeff Brown is co-owner of 'Harry and the Natives'.\u003cbr/\u003eBrown says there's variety to the taste of a gator burger, depending on the spices used during cooking.\u003cbr/\u003eWhile the alligator burger may be a local delicacy, there's a growing list of customers who ask for the filets.\u003cbr/\u003eAll American Gator Products ships to 38 states in the United States and to half a dozen foreign countries.\u003cbr/\u003eAnd the taste ? It is generally compared to chicken, it is a lean meat that takes on the flavours of the spices which are used to season the flesh. \u003cbr/\u003eWith its annual gator hunt, Florida is like other Southern states populated by the large reptiles, including Georgia, South Carolina, Alabama, Mississippi, Louisiana and Texas.  \u003cbr/\u003eAnd with more than a million gators, Florida typically
