cafes and kitchens producing snacks from Lebanon, Morocco, Bangladesh, Pakistan and India in one of Sydney's most colourful suburbs.\u003cbr/\u003eTaste Food Tours are run by The Benevolent Society, Australia's oldest charity, which celebrates its bi-centenary next year.\u003cbr/\u003eParticipants learn about different foods and cultural traditions, taste a range of specialities and are given tips, samples and recipes to take home.\u003cbr/\u003eThe tours were originally conceived to showcase the multicultural culinary traditions of south-western Sydney, and encourage visitors from other parts of the city who wouldn't normally travel to the area.\u003cbr/\u003eThe idea quickly evolved into a social enterprise, aiming to assist local businesses and create jobs for residents.\u003cbr/\u003eThere are now 17 different food tours in nine locations across south-western Sydney, guiding visitors through South East Asian, European, Middle Eastern and South American cuisine.\u003cbr/\u003eSome of the most diverse tours are held in the Canterbury local government area, which is home to people from 137 nationalities, according to The Benevolent Society.\u003cbr/\u003eA tour in the suburb of Lakemba called 'From Beirut to Bangladesh' takes participants on a culinary journey through Australia's migrant communities from Lebanon, Morocco, India, Pakistan and Bangladesh.\u003cbr/\u003eAfter an introductory briefing in a park, the tour group's first stop is a bakery specialising in Lebanese pizza.\u003cbr/\u003eParticipants sample ayran, a traditional yoghurt drink believed to aid digestion, before trying a variety of pizza toppings, including shanglish (cheese) and zatar (herbs).\u003cbr/\u003eTo make sure the touring foodies don't fill up too quickly, the itinerary includes a mixture of eating and shopping stops.\u003cbr/\u003eOne of the stores on the schedule is a multicultural grocery shop stocking foods from Bangladesh, India, Pakistan, the Middle East, Africa and South East Asia.\u003cbr/\u003eOwner Mohammad Khan offers advice about how to use different Bangladeshi ingredients, and says visitors are often surprised by some of the foods they have never encountered.\u003cbr/\u003e\"They even taste some of the fruits and vegetables, and there are some fruits like green mangoÄÅ¼Ëthey'd never think that green mango you can eat. Usually people eat the sweet mango, the ripe one, (but) when they taste the green mango it's salt and pepper (flavoured), they like it.\"\u003cbr/\u003eBoth tour guides and shop proprietors give tips on recipes and ingredients, allowing participants to experiment with cooking foods they have never tried, or only eaten in restaurants.\u003cbr/\u003eParticipant Christopher Stobbs says he enjoyed learning about different spices and how they are used:\u003cbr/\u003e\"One of the local guys was telling us about all the spices and all the foods. I learnt quite a lot about how the foods and spices used in Middle Eastern countries are all very, very similar, and how they differentiate very slightly from different regions, and I thought that was very, very interesting.\"\u003cbr/\u003eThe food tour guides are all local residents, and many are women who recently migrated to Australia and were previously unemployed. \u003cbr/\u003eCathy Quinn, Growing Communities Manager at The Benevolent Society, says the tours have offered some migrants the chance to enter the Australian workforce for the first time.\u003cbr/\u003eShe says no specific skills or experience are needed, apart from an enthusiasm about food and culture.\u003cbr/\u003e\"We do put them (tour guides) through official training, but ultimately it's their love of food, their love of their culture, their love of the new Australian culture that they've adopted that comes through.\"\u003cbr/\u003eAt a Moroccan cafe, the group samples traditional mint tea and mamoul (pastries).\u003cbr/\u003eOn the whirlwind tour, it's easy for participants to forget some of the new foods they encounter, so each one is given a notebook and pen to keep track of what they've tried and liked, ingredients, recipes, and the names of restaurants.\u003cbr/\u003eQuinn says many participants keep in touch with each other by forming 'foodie' Facebook groups, and book on further tours together.\u003cbr/\u003eThe itinerary also allows visitors to go inside kitchens and see how some of their favourite foods are made. \u003cbr/\u003eDuring the lunch stop at a Pakistani restaurant, participants watch the chef making naan bread and tandoori chicken.\u003cbr/\u003eQuinn says it was initially a challenge to persuade business owners to allow tour groups into their premises, because they didn't realise they had anything interesting to offer visitors.\u003cbr/\u003eShe says there's a clear change in the attitude of proprietors once they realise people are curious about their food and traditions.\u003cbr/\u003e\"Once they've experienced it for the first time you see this intense shift in their preparedness to actually talk about themselves and share their story. So it actually goes from being just about the business, to actually them slowly starting to share their story, and the importance of food in their culture, and their community, with the tour group. And that's the bit we're aiming to achieve.\"\u003cbr/\u003eTaste Food Tours has focussed on creating itineraries in areas that have a rich variety of cuisine, but were previously unknown as 'foodie' destinations.\u003cbr/\u003eLakemba and its surrounding suburbs have a reputation for crime and social problems rather than food, and The Benevolent Society is hoping to change Sydneysiders' perceptions of the area through the tours.\u003cbr/\u003eThe group's final stop is a Lebanese sweet shop specialising in baclava, where participants sample a range of pastries.\u003cbr/\u003eOwner Allen Sayed says he's enjoyed welcoming people from different cultures and other parts of Sydney through the food tours.\u003cbr/\u003e\"Every nationality, they come here. First of all they go and have dinner somewhere, then they come here in the night and have a dessert. When they have a dessert, they keep telling me 'Abu Adam (shop name) is very nice sweets, very tasty'.\"\u003cbr/\u003eParticipant Anne Lawrence says she feels more confident cooking foods from other countries thanks to the tour.\u003cbr/\u003e\"Some of the exotic foods and ingredients, now I feel a little bit more familiar with them, and we've been given the recipes as well, so that was a great experience.\"\u003cbr/\u003eGuide, Sahar Elsemary has been leading food tours in the Canterbury area for a year.\u003cbr/\u003eShe migrated to Sydney from Egypt in 1997, and had never had a job in Australia until she was offered a role with Taste Food Tours.\u003cbr/\u003eShe says she's enjoyed helping change people's negative perceptions of Lakemba through sharing food.\u003cbr/\u003e\"People, when they come to Lakemba for example, after hearing about how bad (it is), some of them were scared to come to Lakemba. But they said 'oh my god, it's not that far, and the people are really good people, and very interesting to know'.
