Mid shot Buckingham Palace cake with red double decker bus \u003cbr/\u003eThe recession has meant a huge resurgence in home baking in Britain. \u003cbr/\u003e41 million Brits are said to have caught the bug , which has led to spin off TV shows and craft classes.\u003cbr/\u003eThe Cake International show in London celebrates the latest trends which include high art sugar craft and novelty cakes.\u003cbr/\u003eAlmost too good to eat, these stunning cakes could be considered to be edible art rather than mouth watering treats. \u003cbr/\u003eEverything from the London Underground to underwater sea creatures are considered fair game for this sugary art. \u003cbr/\u003eMore than 100 cakes are showcased here at the Cake International show in London, a specialised exhibition focusing on sugarcraft and cake decorating. \u003cbr/\u003eCompetition cakes are judged in various categories, from best decorated celebration cakes to international cakes.\u003cbr/\u003eBaker Nick Smith is one of the judges. He says he's looking for a perfect cake with a clean finish, that demonstrates good idea development and a nice use of colours - exemplified by this elephant cake.\u003cbr/\u003e\"I think the proportions are really good on it, nice idea, real good facial features, good use of colour, good stuff in there and obviously it's quite an attractive piece,\" says Nick Smith.\u003cbr/\u003eNow in its 19th year, the Cake International show, which runs April 12-14 in London's Excel Centre, boasts over 80 stalls selling the latest accessories and utensils for the keen cake decorator. \u003cbr/\u003eSometimes it's easy to forget that these tools are used for cakes: take these colour dusts, glitters and edible glue. All for turning home-baked cakes into show-stopping design pieces. \u003cbr/\u003eOrganiser Andrew Morton, says that the Cake International show has grown exponentially since its launch in 1994 in Birmingham. Long gone are the initial days when only a humble 6000 visitors showed up, now approximately 25,000 visitors flock to the three-day event in London. He boils it all down to the success of baking TV shows. \u003cbr/\u003e\"Just look at the TV programmes that are out there now, the Great British Bake Off is obviously the key. Those who are creative and enjoy being creative, it's just given them that next fillet of inspiration to take things forward and try even harder,\".\u003cbr/\u003eThe show attracts both industry experts and home bakers.\u003cbr/\u003eAccording to a Mintel Research study from November 2012, the UK home baking market has doubled in size over the last five years, rising by 59% to ÄÅ¼Ë1.7billion (2.6$ billion USD).\u003cbr/\u003e41 million Brits are now baking at home ( Mintel) , with almost a quarter of adults baking at least once a week and one in twenty baking every day.\u003cbr/\u003eBaking is obviously on trend, and some home bakers are even turning their hobby into a business. \u003cbr/\u003eJulie Askew is the editor of Cake Craft \u0026amp;amp; Decoration Monthly magazine.\u003cbr/\u003e\"Trends in cake decoration tend to be very much still cupcakes, but instead of just a swirl of buttercream on the top you have more model pieces and sugar veil and we are finding that because of the recession, people are turning to cake decorating and turning it into businesses, there's an awful lot of businesses propping up with cake decoration,\" she says. \u003cbr/\u003eOne of the main trends shining through at the show is edible sugar veil. \u003cbr/\u003eIt's a paste that is smoothed onto a textured mat, then peeled off to become a delicate piece of lace that can be wrapped around cakes to create stunning effects.\u003cbr/\u003eBaking legend Mary Berry has been baking all her life and is one of the celebrity judges on the Great British Bake Off. She explains there is a difference between cake bakers and cake decorators. \u003cbr/\u003e\"Here we see wonderful displays of decorated cakes in every possible form. And we're not seeing open tarts, and bread baking and things like that.
