competitive market it helps to produce a distinctive product. \u003cbr/\u003eOne Costa Rican farmer has developed his business by increasing quality and a landing a contract with a major coffee house chain. \u003cbr/\u003eCoffee producers in Costa Rica are now reaping the benefits of changing their traditional farming methods in the 1990s.\u003cbr/\u003eNew coffee producers across the work meant the market was flooded with cheap coffee. \u003cbr/\u003eThis meant Costa Rican coffee farmers were faced with a  dilemma : disappear or totally change the way they produced coffee.\u003cbr/\u003eSome farmers switched crops, while others began specialising in the production of fine quality coffees.\u003cbr/\u003eRonald Peters is the General Manager of the Costa Rican Coffee Institute, Icafï¿½.\u003cbr/\u003eHe says in the 90s the international coffee market collapsed after the quota system was eliminated.\u003cbr/\u003eAs a result the market was flooded with cheap coffee.\u003cbr/\u003eDespite the turmoil of the 1990s, one Costa Rican farmer managed to weather the storm.\u003cbr/\u003eAntonio Barrantes and his brother switched to producing gourmet coffee.\u003cbr/\u003eThanks to move their produce was able to fetch higher prices.\u003cbr/\u003eNow their farm has the best facilities to improve the quality of the coffee they sell. \u003cbr/\u003eThey have developed a high level bean, which sells well on the American and Japanese markets.\u003cbr/\u003eBarrantes says they had to diversify or disappear.\u003cbr/\u003eIn 2002 a buyer from the coffee shop chain Starbucks liked the coffee so much that he bought all of that year's crop. \u003cbr/\u003eToday most of the coffee produced on the farm is bought by Starbucks, and sold in its cafeterias across the world.\u003cbr/\u003eDespite making a success of his business Barrantes is not interested in putting profit before quality.\u003cbr/\u003eHe says he does not use chemicals that can harm the soil and humans.\u003cbr/\u003eMany of the small family run farms are certified organic or simply chemical free.\u003cbr/\u003eRicardo Azofeifa is an internationally certified coffee taster says Costa Rican coffee is famous for its acidity, sweetness and unique taste.\u003cbr/\u003eOn hand to make the 'perfect' cup of coffee is Enrique Morales, a professional barista.\u003cbr/\u003eHe says Costa Rican coffee is ideal for making cappuccinos.\u003cbr/\u003eA cappuccino is a coffee topped with milky foam.\u003cbr/\u003eFor those who prefer their coffee without milk, Azofeifa says espressos made with Costa Rican coffee are fragrant and sharp.\u003cbr/\u003eAn espresso is a small straight shot of coffee.\u003cbr/\u003eAll coffee produced on Costa Rican farms is tested before it is shipped.\u003cbr/\u003eOfficial tasters from the Costa Rican coffee institute (ICAFE) certify the product's quality.\u003cbr/\u003eOne of the institute's best tasters in Giovanni Mora.\u003cbr/\u003eHe says he is able to taste all kinds of different flavours in a cup of coffee.\u003cbr/\u003eThese flavours range from chocolate, citric, sweet and caramel.\u003cbr/\u003eOnce Costa Rican coffee has undergone all these rigorous tests it can be finally appreciated by consumers the world over.\u003cbr/\u003eAnd what better way than at sit a
