Tilt up across Crawley eating ice cream\u003cbr/\u003ePatients battling cancer are being offered relief from the nasty side effects of chemotherapy, by tucking into a tub of medicinal ice cream.\u003cbr/\u003eCurrently being trialled in New Zealand, the strawberry-flavoured dessert has been developed using a special milk fat and protein combination that scientists hope will help alleviate problems including diarrhoea and white blood cell depletion.\u003cbr/\u003eDairy farming has historically been one of New Zealand's biggest industries.\u003cbr/\u003eNow producers are applying science to food production to branch out from regular milk-based items.\u003cbr/\u003eResearchers have developed an ice cream formulation which they believe could alleviate some of the side effects of chemotherapy, such as diarrhoea and white blood cell loss.\u003cbr/\u003eThe product, known as Recharge, is a strawberry-flavoured ice cream created by scientists at LactoPharma, a joint venture between dairy giant Fonterra and the University of Auckland.\u003cbr/\u003eFonterra is the world's largest milk processing company; a farmer-owned cooperative with its headquarters in New Zealand. \u003cbr/\u003eLactoPharma combines the knowledge of Fonterra's dairy researchers with university medical expertise to identify and enrich components of milk which could possess medically useful properties.\u003cbr/\u003eFonterra Chief Technology Officer, Dr. Jeremy Hill says the company has long been researching the medical benefits of milk.\u003cbr/\u003e\"We've been involved in looking at the various components, including the bioactive components, in milk for a very long time, in fact decades, and recognising that milk was full of a wonderful cocktail of various components and ingredients that could have specific health-promoting effects. We developed technologies to separate these various components, enrich them if you want, from milk, and then work with various partners to identify which particular health-promoting characteristics those components might have.\"\u003cbr/\u003eWith recent research identifying a number of useful milk compounds, scientists decided that the development of a product which could help chemotherapy patients was a priority.\u003cbr/\u003eAssociate Professor Geoff Krissansen from the University of Auckland's School of Medical Sciences is part of the LactoPharma research team.\u003cbr/\u003eHe says the side effects of chemotherapy treatments can have serious consequences. \u003cbr/\u003e\"These drugs cause diarrhoea and white blood cell loss, exposing people to infection. And this diarrhoea and loss of white blood cell count can be life-threatening, and can delay therapy.\"\u003cbr/\u003eIn trying to formulate a treatment for cancer patients, scientists looked at both milk fats and milk proteins to investigate their potential uses.\u003cbr/\u003eLactoferrin, a protein in milk, is recognised as being beneficial to  patients undergoing immunosuppression - suppression of the immune system - and researchers found that an iron-saturated version was particularly effective for patients receiving chemotherapy.\u003cbr/\u003eThey also discovered new properties of milk fats which could inhibit gut damage and improve white and red blood cell counts.\u003cbr/\u003eRecharge ice cream was developed from a combination of these two active ingredients, according to Krissansen.\u003cbr/\u003e\"We sort of then had the hypothesis that, maybe, if you combine both of these two bioactives, and we combined them into a product that we called Recharge, and we called it Recharge, because we thought it would recharge a person's body to be able to withstand the chemotherapy. And that's how I guess the Recharge was developed,\" he says. \u003cbr/\u003eHaving identified potentially effective dairy ingredients, scientists decided to develop an ice cream in the hope that it would preserve the product's bioactivity through its frozen formula and allow it to be stored for long periods of time.\u003cbr/\u003eBut they faced the challenge of turning the recipe into an ice cream without compromising its beneficial properties.\u003cbr/\u003eThey worked with Fonterra-owned ice cream manufacturer Tip Top to find a method that would safeguard the formula during production, as Hill explains.\u003cbr/\u003e\"Ice cream normally undergoes a heating step during its manufacture, pasteurisation, and pasteurisation would have inactivated the dairy ingredients that we had enriched to add to it with the particular properties.
