The grapes haven't missed out on the traditional autumn harvest but are destined for the production of ice wine.\u003cbr/\u003eIce wine is produced from grapes that have been allowed to freeze one the vine before being harvested.\u003cbr/\u003eThroughout winter people come to the Canadian state of Ontario to marvel at how the climate and scientific innovation have combined to create some of most acclaimed ice wines in the world. \u003cbr/\u003eIce wines were first made in the modern era in Germany in 1794.  The first vintages may have been accidental when farmers tried saving their grapes from a sudden frost and noticed the deep, sweet quality of the grape.\u003cbr/\u003eIn the 1980s, entrepreneurial wine makers in Canada started taking advantage of Ontario's long cold winters, a vital part of making ice wine. \u003cbr/\u003eIn 2009, Ontario's wineries produced more than 900,000 litres (238,000 US gallons), according to the Ontario Wine Authority.\u003cbr/\u003eThat same year retail ice wine sales totalled 90 million Canadian dollars ($USD 91.5), according to the Wine Council of Ontario. \u003cbr/\u003eThe climate in Ontario is a perfect match for ice wine production. \u003cbr/\u003eSummers are hot and humid and the winter months are extremely cold and crisp. \u003cbr/\u003eIn early winter, as temperatures fall to a legally defined minimum of 17.5 degrees Fahrenheit (-8 degrees Celsius) or lower for ice wine, teams handpick the grapes and press them right away. \u003cbr/\u003eThe result is an aromatic, thick liquid with highly concentrated natural sugars and acidity. \u003cbr/\u003eGermany, Austria and the US also produce ice wine, but only Ontario can guarantee that it will produce ice wine every year, because the temperature always falls to necessary levels.  \u003cbr/\u003eInniskillin Wines co-founder Karl Keiser initially chose Vidal grapes to make the winery's first ice wine in 1984, because they are thick-skinned and aren't damaged in the frosts, and he loved their acidity and aromatic flavours. \u003cbr/\u003eThey now produce ice wine with a variety of other grapes, including Riesling, the classic wine-making grape, Chardonnay and red varieties such as Cabernet Franc. \u003cbr/\u003eKeiser says high standards are important in the production of ice wine as it is a luxury product.  \u003cbr/\u003e\"It's expensive, because you're talking about 60 - 100 (Canadian) dollars (USD $61 - 101.5) for a half bottle. It takes a long process. You need the cold winters in the Canadian climate, so it's something unique and it's a really nice product, something you can be proud of and something that we can show internationally as something unique to Canada.\"\u003cbr/\u003eWell, maybe not unique, but Canada's reliably long and cold winters mean that ice wine production can be counted on, year after year, unlike other producers like Germany or Austria where winter temperatures are less certain.\u003cbr/\u003eFor many visitors a trip to Flock Rock Cellars goes beyond sampling ice wine and is about having an authentic Canadian winter experience. Some people enjoy toasting marshmallows over an open fire.\u003cbr/\u003eEd Madronich, proprietor of Flat Rock Cellars, says making ice wine is not always easy and there are many challenges.\u003cbr/\u003e\"Getting the right temperature, getting the right climate during the summer.
