With the passion of a true chef he gazes lovingly at the bulb, and carefully wipes the dirt off it.\u003cbr/\u003eColonna is a deep believer in the importance of garlic in Italian cuisine and he does not tolerate people who get persnickety about a little garlic in their food.\u003cbr/\u003e. SOUNDBITE ANTONELLA COLONNA, CHEF, translated from Italian\u003cbr/\u003e\"it would be a massacr e, taking garlic out of Italian cuisine is like taking the violin out or an orchestra.:\"\u003cbr/\u003eColonna says taking away garlic would be a massacre, like taking the violins out of an orchestra.\u003cbr/\u003eBut The anti-garlic side has started a ferocious campaign for garlic-free dining.\u003cbr/\u003eThey have a high-profile spokesman in former Premier Silvio Berlusconi, whose aversion to garlic and obsession with minty breath are legendary.\u003cbr/\u003eCarlo Rossella, who heads the news department for one of Berlusconi's Mediaset channels and shares his same phobia is leading the campaign\u003cbr/\u003e11. I can only say I have a terrible allergy to garlic, when I feel that somebody is eating garlic or somebody loves garlic or somebody has garlic in his bags or somebody has garlic in his house, I immediately have a bad feeling. Garlic for me is a sort of persecution in Italy.\"\u003cbr/\u003eRossella has found a friend in Sicilian Chef Filippo La Mantia.\u003cbr/\u003eLook around the kitchen of Filippo La Mantia's hip restaurant in downtown Rome and you'll see oranges, leaves of fresh basil, olive oil. But no garlic.\u003cbr/\u003eLa Mantia says he will never use garlic.\u003cbr/\u003e16.
