But I put so much pressure on myself and I would create these dishes that were overly complicated and I'd be in a deep sweat and I'd be super stressed out or I'd like buy too much or whatever and, over the years, I've really learned ways to make it look effortless and how it's really more the philosophy about enjoying the process and I wanted to share some of my recipes that I know are like super crowd pleasers and that make it successful you know? When you actually have to go through it, I probably made a lot of these recipes 25 times, you know? Twists, you know tweaking things, adding more cumin, less cumin, more peppers, you know whatever it was, a little chocolate. Things to kind of heighten flavor and to make it that specific is a big deal. Even things like making sure you have sea salt and whenever you use course kosher salt, so it's the same throughout the book. There's these little things that could make you go crazy (laughs.)
