There's dozens of kinds of fruits that I have never eaten before that are available here in Singapore. Apparently we can't do durian ( a smelly yellow fruit popular in South East Asia) in beer, but other ones rambutan (tropical fruit similar to lychee), goji berry (berries that eaten dried, taste like raisins) different kinds of nuts that we would like to  experiment with and incorporate into new beers. Fal walking in little India market  \u003cbr/\u003eSingapore is renowned for its vast array of exotic foods from all over Asia.  \u003cbr/\u003eNow it has started brewing beers with spices and herbs to compliment the region's most famous dishes.\u003cbr/\u003eWine lovers are familiar with choosing the right wine to compliment their meal. \u003cbr/\u003eWhite wine is said to compliment white meat and fish, and red wine is said to go best with meaty meals or game. \u003cbr/\u003eBut now a brewery based in Singapore is taking the idea and adapting it to matching Asian cooking with ales. \u003cbr/\u003eThe beers developed by the Archipelago Brewery contain local spices such as lemongrass, ginger and coriander.\u003cbr/\u003eThere's 'Trader's Brown Ale' -  which is made with gula melaka, or palm sugar, making it perfect for roasted meats. \u003cbr/\u003eAlso on offer is  'Travellers Wheat' with assam, ginger, coriander and lemongrass, which is said to compliment seafood and Asian salads, whilst 'Straits Pale' is reputed to taste great with curry.\u003cbr/\u003eSingapore - at the heart of the Straits of Malacca - has long been a magnet for foreign traders.  \u003cbr/\u003eIn the 19th and 20th centuries migrants flocked to this tiny island from afar as China, India and Malaysia.  \u003cbr/\u003eToday the island state's cuisine reflects its colourful history.\u003cbr/\u003eThe district known as 'Little India' is teeming with curry houses. \u003cbr/\u003eIt's markets are full of spices and herbs. \u003cbr/\u003eThe sights and smells here inspired American brewmaster Fal Allen to develop the unique rang of beverages. \u003cbr/\u003eAllen is the brewmaster of the Archipelago Brewery. \u003cbr/\u003eHe says that first of all he experimented with lots of different spices to see how the flavours worked with different kinds of foods. \u003cbr/\u003eFal says the different flavours in the foods combine well with the spices and herbs in the beers.\u003cbr/\u003eThe Archipelago Brewery reopened in July 2006 after a break of 67 years.\u003cbr/\u003eThe original Archipelago Brewery was established in 1931 by a German company.  \u003cbr/\u003eBut when World War Two broke out in 1939 the British, who controlled Singapore then, had it closed down.\u003cbr/\u003eThe new brewery owners, Asia Pacific Breweries, want to resurrect the traditional brewing techniques of the past.\u003cbr/\u003eThe bespoke beers combine Western brewing techniques with exotic Asian spices.\u003cbr/\u003eFal was recruited from the United States to make the new beers.  \u003cbr/\u003eThroughout the 1990s he was at the forefront of the craft beer revolution that swept America.\u003cbr/\u003eNow Asia Pacific Breweries hope to make their mark in the brewing industry.\u003cbr/\u003eIn the heart of Singapore's business district is the Archipelago Brewery Bar.  \u003cbr/\u003eIt's been set up by the brewery to showcase their beers.
