U-S...\u003c/span\u003e\n\u003cspan class='full-description hide'\u003eEnglish/Nat\u003cbr/\u003eIn the heart of China's capital, a favourite American breakfast food has gone up against egg rolls and noodle soup.\u003cbr/\u003eA Chinese-American entrepreneur says her Bagel factory first drew only westerners living in Beijing. \u003cbr/\u003eU-S President Bill Clinton, who visits China this week, may pass up the bagel option for his favourite, McDonald's.\u003cbr/\u003eBut in a society where a growing middle-class wants to eat out and sample new tastes, the boiled-then-baked rolls are catching on.\u003cbr/\u003eA workers' breakfast at a roadside food stall in Beijing.\u003cbr/\u003eThe fare served up here is what Chinese have been eating for breakfast for centuries.\u003cbr/\u003eSome opt for stuffed egg patties or won ton soup.\u003cbr/\u003eOthers tuck into dough sticks deep fried in oil.\u003cbr/\u003eWhile southern Chinese might reach for a bowl of rice or Cantonese dim sum, as Northerners slurp noodles, the basic ingredients are constant throughout China.\u003cbr/\u003eBut in the country's urban centres, a new crop of upscale eateries are targeting a growing middle class ready to sample western foods and spend a bit more on meals.\u003cbr/\u003eOne such venue is Johnny' Cafe in northeastern Beijing, with its English signboard it's clearly billings itself as a western experience.\u003cbr/\u003eAnd here the special attraction is bagels.\u003cbr/\u003eThe boiled-then-baked Eastern European roll has migrated to China via New York.\u003cbr/\u003eBut it wasn't an instant success story.\u003cbr/\u003eFirst, bagel makers found only western Beijing residents were interested in the hard rolls.\u003cbr/\u003eBut their popularity soon spread to the local residents, eager to sample a snack billed as a western and American favourite.\u003cbr/\u003eThe bagels are mass produced at a factory run by a Chinese-American woman who moved to Beijing several years ago.\u003cbr/\u003eFirst boiled, then baked, bagels are little more than flour, salt, water, and yeast.\u003cbr/\u003eIt's quite a revolution in a country where cheese and bread were virtually never eaten even a few decades ago.\u003cbr/\u003eThe factory pumps out bagels by the dozen, whether sesame, poppy seed, onion or garlic -- they have it on offer.\u003cbr/\u003eLejen Chen, the woman behind Mrs. Shanen's Bagel factory, started the business in 1996.\u003cbr/\u003eNow 37, Chen left Taiwan at age eight and moved with her family to New York, touted by some as the world's bagel capital.\u003cbr/\u003eChen says presenting bagels as a western delicacy and a healthy breakfast choice is helping to draw customers.\u003cbr/\u003eSOUNDBITE: (English)\u003cbr/\u003e\"Bagels come in different flavors, you can put different things in it. It's high protein, it's very healthy. So it's hard for me to find someone to do cleaning. Even though lots of people can do it, but the standards are different. I can look at our glass here and say, I think it needs to be cleaned, and they can look at it and say it's clean already.
