Various of people looking at lavender related products shop  \u003cbr/\u003eLavender oil prices in the UK have risen, compensating for this year''s smaller crop. \u003cbr/\u003eHistorically lavender has played an important part in Britain''s agricultural output, and now there''s a revival of interest in the perfumed herb.\u003cbr/\u003eA hot summer''s day with row upon row of lavender bushes stretching as far as the eye can see. \u003cbr/\u003eLavender fields like these have been seen across southern England ever since Roman settlers introduced the herb.\u003cbr/\u003eWhen the flowers develop their deep purple hue it is time to  harvest. \u003cbr/\u003eThe best time to harvest lavender is in July - August.\u003cbr/\u003eOnce done painstakingly by hand, now the process is mechanized with this tractor making short work of the long narrow rows.\u003cbr/\u003eBut the commercial uses of lavender are still significant even though the quantities produced vary depending on the weather . \u003cbr/\u003eTim Butler, a Hampshire lavender farmer, says that it is fortunate that the price for oil has risen to compensate for the small amount of production this year. \u003cbr/\u003eHe says: \"The oil price in actual fact has certainly risen a lot, quite a lot this last year. And therefore it makes it far more economical now to distill for oil. Whereas on a difficult summer like this, where we''re not producing big quantities of oil and we''re having disappointing yields of oil, the prices that we were on last year would have been completely uneconomic. But this year it does help to make up for that shortfall.\" \u003cbr/\u003eThe cut lavender is scooped into giant churning vats. The chaff is seperated and the waste product is spat out - only the purple heads are required.\u003cbr/\u003eProducing the oil is a relatively straightforward process.\u003cbr/\u003eSteam is pumped through the cut lavender at pressure and the oil is extracted in the extreme heat.\u003cbr/\u003eIt runs clear through this funnel and is bottled at source.\u003cbr/\u003eBut the oil isn''t ready to go on sale just yet. It needs to be left to mature for a year to allow the fragrance to develop - just like a wine.\u003cbr/\u003eIan Margetts , who''s a farm manager, explains the pro and cons of growing organic lavender: \u003cbr/\u003e\"I currently have 11 hectares of lavender in the ground, which we farm organically. So in this fascinating weather Chinese people like to come here and see the lavender that they don''t see in China,\".\u003cbr/\u003eThe scent coming from the fields and the purple haze lying over the land brings in many people who have never seen lavender before.\u003cbr/\u003eAlthough lavender has shaken off its old Victorian image, it is so steeped in the history of England that the heritage aspect of the herb cannot help but promote it.  \u003cbr/\u003eDried lavender sells for around ÄÅ¼Ë25 (USD $39) for a 1kg bag and lavender oil for around ÄÅ¼Ë33 (USD $51) for
