You know I've seen a lot of kids make the weight drained and tired and you know it's not really the way to go about it. Me myself, I just gradually start slowly coming down a few weeks ahead of the tournament and just losing 0.4 (kilos), or 0.2  you know each day just gradually bringing it down slowly and then your body doesn't feel such an impact of losing it straight away.\"  \u003cbr/\u003eEllison ensures body condition by ensuring all his fighters get the full range of amino acids to prevent muscle damage and improve recovery times.\u003cbr/\u003eHe says \"Sodium bicarb(onate) and sodium citrate mainly work for buffering the blood and there's some intracellular buffering strategies like beta alanine and even creatine has got a small buffering effect, we don't tend to use it for that, but it's a nice sort of extra benefit from the creatine, but particularly beta alanine gives a really good buffering effect in the muscle to absorb that acid.\" \u003cbr/\u003eNothing is left to chance, which is why every meal these boxers eat is freshly prepared, weighed and packed here at the kitchen of a company called Soulmates.\u003cbr/\u003eThe firm says it has several premiership football players and a couple of top models on its books.\u003cbr/\u003eStaff individually prepare each meal according to instructions sent from Ellison for each fighter.\u003cbr/\u003eA vegetarian meal will have to contain more protein.\u003cbr/\u003eEvery dish is calculated to produce an exact number of nutrients and calories and it's done here in the office above the kitchen.\u003cbr/\u003eEllison gives an overall picture of what he wants for each fighter, but the fine tuning and menus are created here.\u003cbr/\u003eEvery boxer is given a nutritional breakdown, so Ellison can track what and how much they are consuming at every hour of the day, providing they don't run down to the nearest takeaway. \u003cbr/\u003eThe recipes often look as though they're lacking vegetables, but you'll need a magnifying glass to spot the greens in some of these dishes.\u003cbr/\u003eSoulmates nutritionist Tom Whitehead says: \"We're trying to make it, trying to make the things that they like healthy, so like the meatballs, we use turkey as opposed to mince (lamb, or beef), it's a lot leaner a good source of beta alanine, also in there we've got celery anything there to pack it out really, so any of the vegetables that they might not think that they're eating, they're packed into the meatballs also we've got the healthy chicken burgers, spicy chicken any noodles pasta, all the pasta we use is brown, so it low GI (glycaemic index), so it's not going to affect their insulin levels, it's keeping their fat storage down.\"\u003cbr/\u003eEach box is made up for dispatch twice a week.\u003cbr/\u003eThe idea is that the boxers won't have any excuses to slip from their regime.\u003cbr/\u003eThey don't need to go shopping so, theoretically they don't get tempted by all the fatty foods that look so good in supermarket packaging.\u003cbr/\u003eIt's all ready prepared, so after a hard day's training they don't have to do much more than heat it up and because each recipe isn't repeated for at least several weeks, it means they shouldn't get bored.\u003cbr/\u003eSoulmates says most of the boxers are addicted to their granola breakfast with fresh fruits and their chocolate brownies made with low GI brown flour.\u003cbr/\u003eThe service isn't cheap, it costs hundreds of pounds for the boxers to be properly catered for.\u003cbr/\u003eResearch is going on to perfect muscle performance and recovery.\u003cbr/\u003eScientists are reporting on foods ranging from cherries and beetroot to good old fashioned milk.\u003cbr/\u003eBut precious few elite athletes are keen to take part in a randomized test which might affect their performance, so evidence from the studies is always going to be qualified.\u003cbr/\u003eEllison doesn't believe in leaving anything to chance.\u003cbr/\u003eHe says: \"Everything we do here is evidence based and research based and unless there's a good volume of research there we won't pounce on those strategies so we keep it simple, we keep it simple during recovery and during recovery from injury and take the docs (doctors) lead really, they've got their strategies that they follow and if there's anything we can do to support that, great.\" \u003cbr/\u003eFlyweight Andrew Selby has had difficulty.\u003cbr/\u003eHe's already so lean it's hard for him to lose weight without affecting his energy levels and his muscle tone.\u003cbr/\u003eSelby says: \"You're constantly on the scales, after training I go on the scales, whenever I eat I've got to jump on the scales and if I'm heavy I've got to train again.
