Tilt down on Thai food on table.\u003cbr/\u003eThai food is loved and enjoyed around the world, but many dishes are surprisingly fattening and unhealthy. \u003cbr/\u003eThirty-five percent of Thais are overweight or obese, and the number of Thais with diabetes, hypertension and cardiovascular diseases is rapidly rising. \u003cbr/\u003eInnovative cooking schools in Bangkok are now teaching Thais and foreigners to prepare their favourite recipes in healthier ways. \u003cbr/\u003eBang Rak Market near Bangkok's Chao Phraya River opens early in the morning for business.\u003cbr/\u003eShiang Ying and Adrian Cox, who own a yoga studio, are hoping to learn a few cooking tricks from Marriott Resort and Spa chef Kritphan Jitmanowan.\u003cbr/\u003eThey want to cut down on fat, sugar and oil when cooking Thai food at home. \u003cbr/\u003eShiang has been making her own tamarind sauce, but isn't satisfied with the results.\u003cbr/\u003e\"It's not sour enough,\" she says, \"maybe we should get this next time.\"\u003cbr/\u003eFresh curry and tamarind paste are made and sold here in the market. \u003cbr/\u003e\"We use in the salad and soup and everything for Thai food,\" says Kritphan. \"And tom ka. It's coconut chicken, coconut milk with tamarind. We make tamarind sauce for salmon, for fish, for everything.\"\u003cbr/\u003eMany nearby residents, restaurants and hotels buy fresh seafood and vegetables at this market.\u003cbr/\u003eThe shrimp are some of the best in Thailand, coming from the Gulf of Thailand and aren't farmed like most shrimp available in local grocery stores.\u003cbr/\u003eAfter touring the market, the group boards the Marriott's boat to begin their cooking class. \u003cbr/\u003eThe boat is a 50 year-old rice barge that was fully rebuilt and designed for cooking and cruising. \u003cbr/\u003eThe setting on Bangkok's Chao Phraya River is refreshing and awe-inspiring. \u003cbr/\u003eShiang and Adrian are first learning to cook pomelo salad with Thai herbs and tamarind sauce, known as som o taohu samunprai in Thai. \u003cbr/\u003eThe recipe normally calls for deep-fried chicken or tofu. \u003cbr/\u003eToday they will simply add grilled tofu, prepared without any oil.\u003cbr/\u003eMany guests at the Marriott Resort and Spa are asking for healthier, fat-free food, so the chef is specially tailoring Thai recipes to meet their requests. \u003cbr/\u003e\"When we grill chicken, it has a sweet taste from the fat,\" says Kritphan. \"But if we take off the fat, I will make it tastier using other ingredients such as sauce. The seasoning could be stronger than the taste of the meat.\" \u003cbr/\u003eThe chef is also teaching the class how to prepare hot and sour seabass soup with pineapple and tomato, known as tom ka pla.\u003cbr/\u003eMany Thais add plenty of coconut oil to thicken the broth. \u003cbr/\u003eTo cut down on the fat, the chef doesn't use any at all.\u003cbr/\u003eShiang and Adrian already watch what they eat, and they are healthy and fit. \u003cbr/\u003eBut 35 percent of Thai adults, or 12.6 million people over age 35 are overweight or obese, according to Bangkok's Ramathibodi Hospital. \u003cbr/\u003eEight years ago, the figure was just at 9.6 million. \u003cbr/\u003eTwenty percent of Thais also suffer from hypertension, say doctors at Theptarin Hospital. \u003cbr/\u003eNearly 10 percent of Thais over 35 and 17 percent of those over 65 have diabetes. \u003cbr/\u003eIn 1991, 114 out of 100,000 Thais were hospitalized due to cardiovascular diseases, according to Thailand's Ministry of Public Health. By 2005, that number rose to 618.5. \u003cbr/\u003eDuring the same time period, the rate of hospitalization for diabetes rose from 68 out of 100,000 Thai people to 586. \u003cbr/\u003eNutritionists and doctors in Thailand are encouraging people to eat more fresh fruits and vegetables and stay away from foods that are high in fat, salt and sugar, because they are the most harmful to our health. \u003cbr/\u003e\"If we want to have good health, we should eat food that comes from nature instead of fast food or ready- to-eat-food,\" says Krisadee Bodhidatta, a registered dietitian at Theptarin Hospital. \"Natural foods such as vegetables, fruits, rice, beans and meat. Like a lot of times there's quite a bit of sugar or MSG in the foods. So it's important for me, I guess, if you have health, everything else comes easier. I just want to take better care of my health.\"\u003cbr/\u003eKritphan Jitmanowan has shown it's possible to eat scrumptious Thai dishes without compromising on taste.\u003cbr/\u003eAll it takes is a
