Fruit and vegetable stand\u003cbr/\u003eA quintessential element of traditional Italian and Mediterranean cooking, garlic is at the centre of a gastronomic dispute in Italy, a nation that prides itself on the quality of its food. \u003cbr/\u003eCritics say it is just a stinky product that overwhelms more delicate flavours.\u003cbr/\u003eAdmirers say it enhances taste, gives dishes an extra punch and is also good for the health.\u003cbr/\u003eBut now the former have started a ferocious campaign for garlic-free dining, and the debate has moved out of culinary circles.\u003cbr/\u003eThe anti-garlic brigade have a high-profile spokesman in former Premier Silvio Berlusconi, whose aversion to garlic and obsession with minty breath are legendary.\u003cbr/\u003eDuring his five-year stint, Palazzo Chigi, the premier's palace, was a rigorously garlic-free environment.\u003cbr/\u003eThe bulbous herb has long been a mainstay of Italian cuisine, from steaks in Tuscany to cuisine of the poor south, where cooking is traditionally less rich in butter and cream and garlic's pungent flavour often accompanies simple vegetable dishes.\u003cbr/\u003eAntonello Colonna, one of Italy's most famous chefs, is a deep believer in the importance of garlic in Italian cuisine and he does not tolerate people who get pernickety about a little garlic in their food.  \u003cbr/\u003eHe says that Italian cuisine without garlic is like an orchestra without the violins.\u003cbr/\u003eCarlo Rossella heads the news department for TG5 - one of Berlusconi's Mediaset channels - and shares his phobia. \u003cbr/\u003eRossella, a renowned bon vivant, who says he has an allergy to the ingredient, has been compiling a list of garlic-free restaurants. His aim: making \"distinguished\" restaurants come up with a separate garlic-free menu.\u003cbr/\u003e\"Garlic for me is a sort of persecution,\" he laments. \"They put garlic in almost any dish: With meat, with fish, everywhere. It's not politically correct to impose garlic on everybody.\"\u003cbr/\u003eRossella has found a friend in Sicilian Chef Filippo La Mantia.\u003cbr/\u003eLook around the kitchen of Filippo La Mantia's hip restaurant in downtown Rome and you'll see oranges, leaves of fresh basil, olive oil.\u003cbr/\u003eBut no garlic.\u003cbr/\u003e\"I will never use garlic!\" declares the Sicilian chef, as he demonstrates how he can cook a deliciously flavourful pasta dish, octopus linguine with orange juice and almond pesto, without the ingredient he hates.\u003cbr/\u003eLa Mantia has found his own recipe for garlic-free cooking, and his clients seem to love it. His Trattoria has been a success story on Rome's dining scene since it opened about four years ago.\u003cbr/\u003e\"You can cook perfectly well without it,\" he said. \"I use a lot of different ingredients, mint, basil, capers, orange, lemons, to make up for it.\" \u003cbr/\u003eWhile Rossella and La Mantia are convinced of their anti-garlic position on the streets of Rome, in the open-air
